Papad Tacos- The Ultimate Desi Twist

Serves: 4
  1. Heat a little oil in a pan and add chopped onions. Sauté until they turn translucent.
  2. Add the shredded jackfruit and sauté for a few minutes until it starts to brown.
  3. Add the diced tomatoes and cook until they soften.
  4. Stir in the black beans, corn kernels, taco seasoning, and salt. Cook for a couple of minutes until everything is well combined and heated through.
  5. While the jackfruit mixture is cooking, you can heat the papad tacos. Lightly roast them over an open flame or in the microwave until they are crisp but still flexible.
  6. Fill each papad taco with the jackfruit mixture.
  7. If desired, top with grated cheese and place them in the microwave for a few seconds to melt the cheese.
  8. Garnish with fresh cilantro leaves and serve with salsa, guacamole, or sour cream.
