- 4 large papads shaped like tacos
- 1 cup canned jackfruit, drained and shredded
- 1 small onion, finely chopped
- 1 small tomato, diced
- 1/2 cup cooked black beans
- 1/2 cup corn kernels
- 1 teaspoon taco seasoning
- Salt to taste
- Fresh cilantro leaves for garnish
- Grated cheese for topping (optional)
- Salsa, guacamole, or sour cream for serving
- Heat a little oil in a pan and add chopped onions. Sauté until they turn translucent.
- Add the shredded jackfruit and sauté for a few minutes until it starts to brown.
- Add the diced tomatoes and cook until they soften.
- Stir in the black beans, corn kernels, taco seasoning, and salt. Cook for a couple of minutes until everything is well combined and heated through.
- While the jackfruit mixture is cooking, you can heat the papad tacos. Lightly roast them over an open flame or in the microwave until they are crisp but still flexible.
- Fill each papad taco with the jackfruit mixture.
- If desired, top with grated cheese and place them in the microwave for a few seconds to melt the cheese.
- Garnish with fresh cilantro leaves and serve with salsa, guacamole, or sour cream.
Cooking Tip
- To prevent the papad tacos from becoming soggy, prepare them just before serving. You can customize the filling with your favorite taco ingredients like lettuce, jalapeños, or diced bell peppers for a personalized touch
